Recipe: Rice Cooker Frittata

YOU GUYS. I just discovered the coolest and easiest recipe… rice cooker frittata!! Yep, you read that correctly and are probably thinking, how on earth do you make a frittata from a rice cooker?! Believe me, I was skeptical at first. But now that I’ve tried it, I’m obsessed!

Working long hours has got me thinking of all sorts of recipes that are quick and healthy. This frittata takes so little time to make that “I don’t have time to cook” isn’t really an excuse. 😉

Sautée your favorite vegetables of choice with a bit of olive oil, and add salt and pepper to taste. For the egg mixture, beat 6 eggs and add some cheese (~2 tablespoons, optional), salt, and pepper. Mix in the vegetables and distribute evenly, and then plug in the rice cooker! It’s as easy as that.

*Note: My rice cooker only had one setting, so I had to do it a couple of times for the frittata to be ready. Final result should look like below.

Here I added brussels sprouts, spinach, a potato, and gruyere. Serving size is 4-6. Delicious!
