This Fourth of July weekend I decided to go on a couple of day trips around the NYC area. Despite having lived here almost all my life, there is so much I have yet to see! Our first day of explorations took us to the beautiful Catskill Mountains, home to Kaaterskill Falls, the tallest waterfall in New York State. What a crazy adventure it was!
One of my main goals this summer is to go outside and be more active. I’ve gotten super into hiking lately and am constantly discovering new places to explore around my neighborhood. Might as well enjoy it all while I can, before I move to the concrete jungle in a few short weeks!
Smoothie bowls are one of my favorite things to eat in the summer. They’re refreshing, healthy, and delicious – and not to mention, SO easy to make! Since I’m about to start my first full-time “adult” job soon, I know I won’t have much time to make breakfast in the morning, so I’ve been making a list of quick things I can whip up. Smoothie bowls are perfect because you can do most of the prep work beforehand.
